Lotuschef - The Chef

This is one of my favorite dish.



Ingreditents:-

Hairy Gourd/毛瓜/节瓜 cut into strips



Bean vermicelli/佟粉/粉丝 - 2 bundles or as you wish (note that these absorb liquid, please add more liquid when cooking).



Dried Shrimps / 虾米 - 3 tablespoons or as you wish



Sweet Bean skin /甜腐竹皮 - as you wish. Lightly fry them so that they rise/expand and to a light brownish color.



Salt to taste.

Method:-

Lightly oil pan and stir fry the dried shrimps to light golden brown. Then fry the strips of hairy gourd. Add fluid to simmer. Cover the pan till boiling. Add the vermicelli and add salt to taste.

Garnish with the fried sweet bean skin.

You can add eggs too. Do not beat eggs. Just add into the pan with the vermicelli so that you have white and yellow color from the eggs.
